We use "Bread Traditionale" by Simply Bread Company, a small local valley bread company. Jeffrey Yankellow, Head Baker & Baker Savant, won 1st place at the World Cup of Bread Baking in 2005 with his team. His breads are made without any preservatives or artificial flavors.
All Panini sandwiches are grilled with Mycryo (cryogenised Cocoa Butter) instead of olive oil or butter. Mycryo has a neutral flavor and will have 2–3 times less fat than other oils or butter. It has no cholesterol or trans fats.
